Just like the name suggests, Exquisito Chocolates are simply exquisite. Originating from a small factory on Calle Ocho in the Little Havana district of Miami, this award-winning “bean-to-bar” chocolate made with minimal ingredients is making a big splash in the Miami food scene. Exquisito Chocolates was our product feature for the third Wednesday of this month, and they came prepared with samples and information about their unique, quality chocolates for Wellness Wednesday!
Carolina Quijana, the self-proclaimed chocolate empress of Exquisito Chocolates, began by making the chocolate in her New York apartment. She soon realized her passion for this delectable treat and decided to bring her talents to Miami. Now she owns and manages Little Havana’s first chocolate factory and makes all the chocolate in house daily!
What makes the chocolate so special is that it’s imported from many different countries, including Peru, Guatemala, and Haiti, and is made right from the cacao fruit in a multi-step process. The process starts from fermenting the fruit, then drying, packaging, sorting, winnowing, roasting, and finally molding the chocolate into their craft made chocolate. The dark chocolate is made ONLY with cacao and sugar, with no additional sweeteners, preservatives, or additives.
For Wellness Wednesday, Exquisito Chocolates brought their “Café Con Leche” truffles for guests to sample, with subtly sweet milk chocolate ganache that has been infused with espresso for a latin cafe au lait and covered in a 45% shell. Their truffles are so especially good that they have won a few Academy of Chocolate awards in London in their respective categories!
